Since April, I have been taking a three-month course that combines a two-month chef training course with Mamma's home cooking and gelato, for a total of three months. Most of the Japanese participants are in their 20s, but there are 3 women out of 9, all of whom share the same love for Italian cuisine. They have started their life together happily.

Vaguely, I began to think that in the near future, I would like to be able to offer and transmit delicious and healthy food by combining, in my own way, handmade fermented seasonings (miso, shio koji, amazake, soy sauce koji, etc.), raw rice-formed bread, and my favorite dishes. I decided to participate in this program because I thought I would be able to see a new world from this opportunity to study cooking in Italy.

4月からシェフ養成コース2ヶ月に、マンマの家庭料理とジェラートが合わさった計3ヶ月のコースを受講しています。日本人は、20代の参加者が多いですが、9人中女性は3人、みなイタリア料理への愛情は同じ。楽しく仲良く生活がスタートしています。

漠然ではありますが、近い未来に、自分なりの方法で、自分で作る手作りの発酵調味料(味噌、塩麹、甘酒、醤油麹他)や、生米成形パン,好きな料理を組み合わせ、美味しく健康的な食の提供、発信ができたらいいなと考えるようになりました。今回のイタリアへの料理留学を機に、そこから新しい世界が見えてくると思い参加を決意しました。

I couldn't forget the trip to Italy that I did when I was a student, so I decided to take advantage of my retirement to study abroad for a short period of time. I chose the home cooking class because I love cooking and eating. The first time I came to Italy was when the currency was still the lira. I didn't like tomatoes or cheese, so I used to complain that I didn't have anything to eat, but as I visited many times, including to watch soccer games, I started eating them. This time, while my mind and body are still healthy, I decided to study abroad to learn more about the Italian way of life and food culture that I could not get by traveling, and am taking on my last big adventure in my 60s.

Hello, this is Makoto. I came to Florence to learn about gelato. Until recently, I was undergoing anticancer drug treatment for cancer. Gelato supported me during that treatment. I wanted to learn how to make gelato in the real world, so I convinced my doctor to come to Italy three months after I was discharged from the hospital. Like I did, I would like to someday make gelato that can be part of someone's daily life, or can be eaten by people who are sick and have difficulty eating, or who are terminally ill and cannot eat solid food.

こんにちは、Makoto S です。ジェラートについて学ぶためにフィレンツェに来ました。私はつい最近までがんの治療で抗がん剤治療をしていました。その治療中、私を支えてくれたのがジェラートでした。そんなジェラートを本場で学びたいなと思い、退院3ヶ月で主治医に無理言ってイタリアに来ました。私がそうだったように、いつか、誰かの日常の一部であったり、病気で食事が辛い人、終末期で固形物食べられない人が食べられるようなジェラートを作りたいなと思っています。

Internship


I am an intern photographer and assistant at Accademia Riaci.
I quit my job as a photographer in Japan and came here with my husband who wanted to work at a restaurant in Italy. I took a Gelato Internship Course at Accademia Riaci meanwhile.
After my new challenge, however, I began to think that there was more possibility in the photography field in Italy so I decided to go back to my area of expertise and restart.
I love coffee, so I enjoy visiting coffee bars in and around town. I hope I can let you know useful and helpful Italian daily-life and school information in my reports.

日本で写真の仕事を辞めて、イタリアのレストランで働いてみたい夫についてきてジェラテリアのインターシップをしていました。
が、その後イタリアで写真の仕事の可能性を感じ、改めて色々と挑戦してみているところです。
カッフェが好きなのでバール巡りをよくしています。
