Italian Home Cooking Short Course (#1) – M.I.

I was supposed to enter Florence via Zurich transit, but after a long wait, the flight was cancelled and I stayed in Zurich that day. The next day, I finally arrived in Florence in the afternoon via Frankfurt, and was unable to attend the orientation. I could not attend the orientation after all. I felt reassured by the staff who helped me a lot since I could neither speak Italian nor English very well. Then came the first day of home cooking. With a Japanese interpreter, I was able to take notes and learn about Mamma’s cooking in an enjoyable atmosphere. The food was delicious! After the class, the staff […]

Preparation at a famous restaurant In the preparation tour of a famous restaurant, we observed the preparation of a famous Florentine restaurant, TRATTORIA MARIO. Trattoria Mario is a family-run restaurant that has been in operation for four generations. The menu changes daily, and the menu list is rewritten every day. This is the secret that makes us want to come here every day. This time, after visiting the restaurant, we actually had a taste of the restaurant’s menu! All of the dishes are traditional Tuscan cuisine. Agriturismo During the agriturismo training, we learned about the growing process of grapes and olives and learned about farm cooking […]

(February 24) Rain, Italian class starts at 9:00. What did you do over the weekend to review last week? What did you eat this morning? We started with a conversation. Slide shows showed cooking utensils and terms necessary for cooking with pictures. It was easy to learn Italian words that can be used immediately. The teacher asked us questions in turn and we answered them. Even in group lessons, it is satisfying when everyone has an equal opportunity to speak. After school, I have to decide on a restaurant for my internship, but I am still in doubt. Today, I am going on another gelato quest.

Q2 : Wow! That is amazing! I saw Chef Sugihara’s restaurant on the list of internship restaurants and raised my hand without hesitation. I told Chef Sugihara directly why I came to Italy and how I felt about Italian cuisine. Northern Italian Cooking Lesson Tagliatelle Bolognese pasta made from dough. And Milanese Cotolette. They say you can’t call it cotollette if it doesn’t have ribs on it.
