LAGANE CON SUGO D’AGNELLO E CIMA DI RAPA
Lagane pasta today was made of “Intergrale” flour or wholewheat flour. Lagane looks almost like Pappadelle. Even though they were made of wholewheat flour but they were soft enough and cling to the sauce very well.
We have learned many kinds of pasta sauce already i.e. duck , wile boar , beef ragu , seafood. So today Professor Francesco let us learn to cook sauce from lamb and cabbage.

TRIPPA ALLA ROMANA
Roman style Tripe
Trippe is made of the second stomach of cow. It’s a local dish from Tuscany. However, you can find it easily outside Tuscany. This dish is from Rome recipe. The differences are the Florentin Trippe is more red and the Rome recipe adds some mint leaves to give more aroma.
This is one of the “Cucina Povera” dishes that the farmers made out of left over part of animals or old food .
Mixed Beans and garlic is a side dish which is simple to make. It is good having together with the Trippe. This dish is aromatic of garlic , sage and olive oil.
When you plan to cook Pasta and beans soup , just separate a portion of beans to make this simple dish.
TORTA DI MELE ALLA CASALINGA
Apple cake comes from the North of Italy where is close to Austria as they grow lot of apples in that area. The recipe is very varied. You can add vanilla, lemon, cinnamon as one of the ingredients.
Apple cake is so simple by its nature. Once you bake it, it will become flat so no fuss with finding the beautiful moulds. Home made apple cake is for comforting and enjoying at home.
