FCAS student’s experience🇮🇹(Mr. Taiki Tsurusawa)

My FCAS Chef Training Course has been completed, and a restaurant internship program will start soon.
At the end of the course, a graduation competition in pairs was held in the school. Partners were selected in a lottery and Matteo turned out to be my partner.
The competition theme was all different for each pair, and our dish was “Parmigiana di Melanzane”, a dish made with baked eggplants layered with cheese and tomato sauce.
Soon after the competition began, there was an accident that Matteo cut his finger, but we managed to enjoy cooking together using gestures and Google translation.
Parmigiana di Melanzane is not a dish that you can mask the flavor using tricks, so we first made carefully the tomato sauce with the sweetness of the vegetables, while baking the eggplants over time.
Vegetables were already cut by other teams in advance, so we could use those vegetables without taking much time (Thanks for that😊). Then, we baked the vegetables layered in a “mille-feuille” way in an oven. I think we were able to make a well-finished dish with a light herb flavor.
The result was that we got the 3rd place and missed the championship, but I got enough confidence as our dish was approved by an Italian chef.
My classmates came from all over the world, and some didn’t have cooking experience, and others are already professional chefs. Everyone was so serious about cooking once they enter the kitchen. That was so cool. To me, everyone’s dish was excellent and above all, I had so much fun with them.
